I have searched around to no avail. Are there screen shots/a change list of Tag 2.0?

The main thing to know is that you no longer need to designate a custom blog field to collect tags. The tags are now collected in a special tab of the blog entry edit panel. You can continue to use custom fields as a way to harvest tags in batch though, which can be helpful.
